Tsukiji Fish Market (3)

Using large electric knives the cutting process begins.
It takes 2 men to perfectly line the fish up to make the cut in exactly the right place.
The cutting process is fast and efficient whilst the fish is still frozen.
Fish that is not frozen is cut using the longest, sharpest knives!!!
Great care is taken to inspect the quality of the fish to aid in determining the price to sell at.
